I use 5 cloves for 50 pounds,,the minced garlic in the veggie section is a decent alternative. But like the others said the powder is not a great flavor additive, and the jarred garlic cloves are terrible,
Sausage making can be tough, and it's easy to mess up a bunch of meat. I like to use a pre-mixed spice. I use the REO German Sausage mix from REO Spices. It makes sausage making easy.
