    Live smoke and new smoker review

    First dance with my new girl today!



    Ran a good burn in Thur night and cleaned her out for a new fire last night. This is the tailgate model from Texas Longhorn. It comes with a swivel base and also a hitch mount. 16"x26" I believe. Nice to be able to take it with me sometime, assuming I can find 3 stout friends to help get it to the truck. With quarter inch construction this thing is HEAVY.


    It does have some trade offs over larger and more expensive pits I have had. The firebox is a bit short and I can see I will be having to cut down a bunch of my smoking wood to use in here. Also there is no lip on the bottom of the smoke chamber where it meets the fire box nor is there a drain on the other end. I may need to use a drip pan under a really fatty brisket or pork butt. Not a big deal really.

    A heat baffle of sorts.


    Started a small batch of lump mesquite charcoal at 6:25 and when it was ready in the charcoal chimney I dumped it in the box with two good sized mesquite logs. Wish I had some pecan to mix in today. By 7:00 I was confident the pit was stable at 225 degrees. Hoping this pit will be a wood miser.

    Brisket on with some boneless beef ribs that will be a mid-day snack.

    Nice pit. Glad I'm not the only one that includes a lunch with my brisket. We are going in opposite directions- I am waiting to try a brisket on my egg and you are going back to an offset. I'm not sure I'll ever be content in the bbq department. I'm sure I'll drag the offset back out at some point.

          I was never truly satisfied with brisket in my egg. Just never had a good bark probably because it keeps moisture in so well. It was hands down the best poultry cooker I will ever own. Mainly just got bored and needed a change though.

            Sweet set up! And I agree. Time of the day doesn't matter. If the grill is hot the beer is cold.

                  I have done very little fire management on a cool and rainy day. Pit has held temp like a champ. Added 2 logs all day.

                  Brisket is at 190 now. Couple more hours most likely.

                        That is my every-grocery run beer. I drink lots of others, mostly IPA but Santo is in my fridge always. It's a black kolsh.

                        Ready for this brisket to be done but it's stuck at 190 and not probing all that tender so I must have patience. Plan to rest it for at least an hour, maybe two.

                            Success! Pulls apart with little effort but does not shred like a roast. Good mesquite flavor and the bark that I was looking for. I'm happy.
