    Spent the Day Making Sausages

    Spent the day cutting meat, grinding meat, seasoning meat, stuffing meat, cooking meat and smoking meat. Made some hot links, jalapeno cheese hot links, and jalapeno cheese summer sausage. Some of the links I froze for grilling, some are smoking and I will dry a few.

      I've got 30 lbs of deer meat that I want to do the same to. Just have to find the time.

      Do you have pic of finished product? This will be my first time doing it.

        Sweet!! Made my second attempt at sausage and snack sticks a month ago. Turned out pretty good. I wanna master dried sausage and do summer and pan next. What kind of cheese did you use? Mine kinda shrunk and I needed to use more and bigger pieces of Jalaps and cheese.

          I used high temperature cheese and both pickled and fresh jalapenos. The summer sausage in the bottom picture is ready to eat. The smoked links I will freeze. When I want to dry them I put them in a paper sack in the cold drink frig until they are as hard as I want them.

                    You can order high temperature cheese online or get it at many places that sell sausage making supplies. I got mine at M&M in Lampasas.
