    Brisket buying ?

    I have been reading online about the different grades of brisket:lowest to highest,
    select, choice, prime, and wagu. One writer said garbage in garbage out when referring to select grade briskets, he said always buy choice or above. Now what I have found most local stores for me sell only select grade briskets, Costco has choice grade. I would guess most of us are buying select grade briskets. So with that said what grade are you buying and how have your results been with this grade. Can you smoke a select grade and make it good? I realize this is a very subjective question, what is good for some might be garbage for others. Just trying to get the best bang for my buck when buying a brisket.

    Check out YouTube for Franklin BBQ at Texas A&M he did a good video and talks about it. Who know they had a brisket camp?

      Years ago (20) we use to do BBQ competition. We bought select and won with them a time or two. I would prefer choice, prime is out of my price range.

        Think of steaks. Do you enjoy the cut of meat you get at an upscale resturant versus the stuff that come out of the back of a truck going door to door. The higher the quality, the better the end product will be. Although select and choice cuts can have more of a robust flavor profile.

        If im cooking for my family, I use select. If its a product that im selling then its prime.

          Didn't notice what it was called but I got it at Walmart for $1.97/lb so it probably was select. Smoked it 12 hours yesterday using the Franklin method and it was the best I've ever made. YMMV

              I won't eat/buy beef unless it's prime. Well worth the extra money.

                Buy prime cuts. You can also never go wrong with Wagu, just broke
