    Speaking of processing......

    The next deer or exotic that I take, I am going to try my hand at smoking my own link sausage

    My questions are these.
    Does anyone have a recipe they are willing to share ( I like the spicey sausage but the wife and some of the kiddos..... Not so much) I guess I need a medium type spice

    What is the best wood to smoke with ( keeping in mind that one of my sons has a SEVERE nut allergy so something like Pecan is out

    Lastly, I won't be making a ton of it so would a good quality electric smoker suffice? It is a certainty that the HOA will not smile upon building a "real" smoke house

    We have used an electric smoker with oak chips with pretty good results.
