    anyone made hog jerky

    anyone made hog jerky, if so please give some advice, wife got me a hog hunt for xmas and i was thinking of trying my hand at making some jerky, any recipes would be great, im also thinking about setting up a group hunt in march so if anyone is interested let me know. thanks

    I've never tried hog jerky. It might be good. I'd think it would be kinda greasy, but I'm not sure. I've made lots of deer and beef jerky but never hog.

      I have before I knew better. It might be ok if you get it hot enough to kill all the bugs that could be in the meat but I wouldn't chance it myself. I'm usually not worried about things like that but trichinosis and brucellosis are no joke.

          Trichinae is an illness caused by the consumption of raw or undercooked pork or wild game meat infected with trichinella spiralis

            I've been told you have to cook it to make jerky. (Get hot enough) Smoking doesn't get it hot enough to kill what the hog may have been infected with.

              I killed 3 hogs in early September and took them to Cinnamon Creek for processing. I had them make some hot jerky as they said it was really good. It's in the freezer, but I haven't tried it yet.

                    Do a search for it on the forum. I made it same as deer jerky, but made sure to hold it at 160 degrees in the oven to ensure safety. We had no problems.

                      I made some a few years ago. It was ok. I sent a big bag to my buddy in Pennsylvania and he liked it a lot.
