    Sausage question

    If I use equal parts Boston butt with venison will there be enough fat in the mix for sausage or will I need to add more fat? Thanks

    Should be more than enough, I don't mix it 50/50 but I like my sausage a little lean.

        I prefer boston butts and usually mix 60 deer/40 pork which works good for dry sausage.

          We have always made it 60 pork 40 venison for fresh raw sausage and 50/50 for dry.
