Thanks for any help. Location is Central Texas.
It would be a lot easier to identify if you had better close up pics of the seed head and the leaves and where the leaf blade comes off the stem. If it is an actual "pasture" like as in that is what is is documented as on record not cropland or rangeland. There are a lot of different grasses people plant; kleingrass, many different bluestem varieties, switch grass, many different varieties of lovegrass. Lots of the lovegrasses have a smaller seeds, klein will have a bigger seed close to BB size and the leaf blade has a "pimple with a hair" along the leaf margin or edge, switch grass has a hollow stem, bluestems are like people we are all the same species but there is a lot of different varieties within the species and telling them apart at times is VERY difficult.

I haven't studied range since high school, in the 80s, but looking at pics on the net (small, on my phone) I am really thinking KR bluestem.

Looks like smut grass to me. If so, cows will eat it as a last resort, especially if it is tall like that.

Get in touch with your Ag extension office. They will come out for free and teach you more about your place in 1hr than some learn in a life time and it is FREE!
