Inspired by the Filet Oscar she had at The Palm in San Antonio Saturday night, my bride asked if I could prepare her a similar dish tonight!
I had some frozen crawfish tails left from a spring boil, so I substituted that for the traditional lump crab, and instead of filet my wife brought a ribeye from Brookshires...hey, this is Hallettsville!
My hollandaise was a little thinner (though great flavor and feel) and the spicy crawfish isn't as delicate as crab, but it was an explosion of flavors in every tender bite!
Steak Landrover (for the Cajun influence)!
