    Experimenting with axis backstrap!

    Bored so I thought I would experiment with some axis back straps. Took em out after thawing I pounded em a little to tenderize. Then I coated them with olive oil, some blaze, then put a bunch of fresh cilantro for them to marinate in. Let em sit all day in the fridge then pulled them out added some Sriracha to them and gave em a stir to sit at room temp.

    Then I cut up some broccoli, onion, some jalapeño for a stir fry to go with some rice.

    Plan is to grill the axis rare over some mesquite coals.

    Let y'all now how I turns out.

                            Looks great! I cooked axis ham steak to medium rare last night. Olive oil, garlic powder and sea salt. Not as nice as your setup, but plenty good.
