So I have a question. When you apply for a draw hunt are they on specific dates or do you get to pick the date you go. I work in the oilfield and if I don't know when it would be for there's no point in applying

You apply for specific dates. Some hunts have different options but you still have to apply for a specific date.

I've killed a few feral goats on our ranch. Even the big billy, I put in a crockpot, slow cooked with red wine, beef broth, onion, garlic and it made the best pulled cabrito tacos ever. Back straps weren't terrible.

The few rams I've killed I've had made in to link sausage and dry sausage. VERY GOOD.

Just my take on it.
