First time I had bear, it was overcooked, chewy and greasy. Not Good. Next time I had it in stew. Was slow cooked and very tasty. I've been getting bear sausage from my SIL the last few years and it rocks! A little on the greasy side, but very good. Blacks and Browns both.
... no personal experience, but a good budy has talked about it... he compares it to lamb and mutton, it is very dependent on the cooks ability and knowledge of the meat. It can be great and it can be BAD...
Pigs have trichinosis too but I don't see you not eating pork lol
I haven't had any myself, but I assume it tastes like bear.
Bear has a higher rate of thrich, moreso than hogs, so be very diligent on getting every part up to temp. Steve Rinella got trich from a bear he shot and ate for his show.
I got a buddy up in Idaho and he says the spring bear are better than fall bear because of thier diet. He also said to stay away from the dump areas because they all taste like trash. In the spring black bears eat a lot of berries and in the fall more meat to carry them over.
A few years back in Alaska we killed a young black bear that had been feeding on blueberries. We grilled it over Alder wood and that was some of the best meat I've eaten, it was much better than the Caribou.
I shot a skinny fall black bear in Colorado several years ago that had been eating oak leaves because a early frost had killed all the berries. I started frying up some chicken fried back strap and after getting past the smell tried the first bite.... Not only did it taste bad, I could not get it chewed !!!! I stopped frying and dumped all of it.
I finally found s sucker to take a hind quarter and took the rest to s butcher to make sausage. Had him mix 50/50 bear and pronghorn, another batch bear and deer. Sausage was good especially after 2 or 3 beers....
I've eaten bear from Arkansas several times. It tasted similar to venison to me. I just spiced it and grilled it. Everyone who was around liked it. Can't comment of bears from other regions

Like many things "once you get past the smell, you got it licked ". Would suggest maybe "wrapping it in bacon".
I took the straps and a single muscle off each quarter of the black I killed in Alberta. I soaked em in ice water to bleed them for 4 days then grilled the backstraps with the same rub I put on Venison steaks. It was great! It was a spring bear, and was pretty big.
The outfitters originally said they wouldn't touch it, and that it wasn't fit to feed the coins, but after trying it, they are the lion's share.
