    Keeping Hog Fresh for Processor

    I am looking for a few ideas on keeping a whole hog fresh overnight to drop off at a processor the next day. Right now my thoughts where to clean it, skin it, get it in a cooler full of ice and pack the body cavity full of ice as well and leave the cooler on the porch with the drain open overnight.

    Does anybody have a better idea?

    I kept one in ice for 3 days I drained the water off and put new ice on it cooked and tasted great

      Your plans sounds good. Ice ice and more ice. You're good.

        That's what I do. I've left them on ice like that for a week or so. No issues if it's draining and ice is added as needed.

            Thanks, I've never kept anything that was not completely boned out overnight before so I wanted to be sure

              Quarter it up if it wont fit, keep it on water and ice for a couple days, if you want add a quart of apple cider vinegar to the water and soak 24 hour, change ice and water soak another 24 on water and ice. I heard that will help with gamey if your worried about that, I'm not sure if it helps or not. I do it and haven't had any problems.
