    Smoking sausage (insert Beavis laugh)

    I'm getting all of this smoked prior to tomorrow's wake being held for my FIL who died on Monday.

    The smoker is a relic but I have a good pile of wood burning down in the fire box. Any tips for a smoking rookie or should I be ok?

    Might want to give a little space around them. Looks tasty.

      I didn't want to do it in two batches which is why it's in there tight

        The sausage won't get any smoke where it is touching. Plus the smoke will have a harder time flowing with it completely covered like that. I'd run some across the smaller shelf and create some space on the bottom .

          I understand and have to accept that I won't get the smoke ring along the sides where it's touching, but I'm willing to pay that price to only do one batch.

          Any thoughts on roughly how long I should expect it to take to be ready?

            2-3 hours if you can get proper heat and flow with that giant dampener of sausage.

                  I'm over at my MIL's place, and her smoker has......seen better days. Look at what I've resorted to in order to keep this SOB together long enough to finish the sausage!!
