    Question about stuffed crawfish heads...

I'm seeing recipes for these and also seeing them on menu's served with crawfish bisque...

do you just eat the stuffing out of the head or does the cooking soften up the heads/shell where you eat them too?

I personally have never seen or heard of this. However, a crawfish shell will never be soft enough to eat without tearing up your mouth. I could be wrong, but I just don't see it happening.

Well, that makes a lot of sense...just seemed like a lot of trouble to go to just to eat stuffing.

This. I'd like to see that!

It's amazing how many people love crawfish and most of them have experienced very little of all they have to offer.

the crawfish shells are still hard and do not soften up when placed in the bisque

lots of variations on cooking the stuffed heads as I deep fry mine for 2-3 min., others bake them or cook them slow and low in the bisque

the bite size stuffing is eaten out of the shell much like a stuffed crab shell served at restaurants

crawfish shell with stuffing cut in half to show ingredients: diced crawfish tail, onion, garlic, bell pepper, bread crumbs, celery, seasoning, egg, creole mustard, etc...

not my pic, but gives you an idea of the stuffed heads before they're cooked and placed in bisque

i'll post my recipe up later this evening

no need for batter, just fry / bake them to cook stuffing inside

then your placing stuffed shells in the bisque to cook for another 30+ minutes

Originally posted by sethcros View Post

took me all day to stuff 50 shells

would take my grandmother 2 days working in the kitchen to stuff 200 heads
