    Spread charcoal or pile?

    I usually pile the charcoal up then when it's ready spread it out and cook with no lid.. My buddy was telling me he likes to pile up charcoal and leave it in the corner so he's not cooking over it.. Any of y'all tried it or do it that way??

    If I'm grilling I spread it out. If smoking I leave it in the corner piled up with wood on top of that. Indirect.

      It's a indirect cook....It just takes longer with the same results unless you add wood to it and smoke like oktx does above.......

      Its like putting your steak off to the side of a campfire grill. It gets done but takes more time to do so.

        Usually just on top of spread coals. Except for fish which I want cooked slower.
