I've always had a gas grill (only 23 years old) and I'm in the market for a new one. But something has been pulling me towards a charcoal grill. I know gas grills were made for convience, you just fire it up and you're ready to cook. But how much harder is it to good on a charcoal grill? Is it worth buying one or should I just stick with gas?

I have always done charcoal. its the way I was brought up my dad and whole family use it. BUTTTTT in the process of building a new house and going to have a gas grill/outdoor kitchen. not sure how im going to like it but im open to it. main reason im going to gas is because having to wait for the coals to get right and also just running out of fire and not done cooking just isn't practical anymore.

There is nothing wrong with cooking on gas. I have a Char Broil Tru Infrared propane grill that I love to cook on. I put some wood chips on the the grate, they smoke away and add a fantastic smoke flavor to steaks, burgers, chicken, etc. I also have a 22" Weber Kettle that I absolutely LOVE. The best advice I could give you would be to stick with what you know. Get you a gas grill (infrared to me, is the best) and keep on cooking. You can always buy you a cheap charcoal grill to start playing around with. Also look into getting you some Grill Grates. I got my grill grates from http://www.grillgrate.com/ and they have drastically improved my steak cooking. I use the grill grates on charcoal and on my gas grill and get a perfect steak every time!

Most definitely charcoal is the way to go with ANY grill. However with time and small meal bbq'g during the week it can be a pain. I have both for that reason alone. My advice (take it for what its worth) for a gas grill is get the cheapest "disposable" gas grill in the size that fits your needs. I have had the high dollar SS grill, rotisserie, side burner, cooler on side "king of grills" in the past and they just simply do not last for the amount of money they cost. Sure you can maintenance them after each cook, but who wants to go out and clean a grill after devouring a steak, chicken or whatever. Even then burners, igniters, grates all break down and will need to be replaced. So I can buy the cheap $100 grill once a year and come out way ahead this way. I have yet to tell a difference in taste from food that comes off of a "disposable" or high dollar gas grill.
