    Aoudad-acoa?

Two people are mostly to blame for my recent new found obsession ... cooking stuff that most folks won't.

The first person is Farfromhome who fed me crispy tacos made with ground aoudad, killed at Whodathunkit II.

The second person is Sneaky, who really peaked my curiosity when he cooked up a stinky old merino ram, Greek style.

I've since cooked javelina and bear, both pulled pork style and babado ram the way Sneaky did. I took all 3 dishes to work and they were gobbled up; even after I told the people what they were eating.

Last weekend I killed a 250 lb aoudad ram while hunting at courtatlawjudge's ranch outside Whitney. I donated 3/4 of the ram to his pastor, who was very greatful for the gift and kept some to try for myself. Or I guess I should say cook it and feed it to my coworkers to see if they like it.

So, here's the start of my aoudad-acoa!

Onion, minced garlic, Barnacle dust, black pepper, red pepper, chili powder and a little pollo asada seasoning.

I'll serve it tomorrow with tortillas, pico and shredded cheese.

I bet it comes out good! My daughter and I have a hunt scheduled at Thompson's in June and I'm looking forward to trying Sneakys recipe on our Rams! I've shot a few Rams in the past but these will be my first to eat.

We ate the heck out of the aoudad I shot 2 years ago. Your recipe looks outstanding. Looking forward to the results

I'm with you. Just made some beef sticks from ram. Turned out good for our first time. Fed the kids awhile back an aoudad back strap and red deer back stripe. The aoudad went first. If you had aoudad that was bad then it was not preped correctly. And that's from the skinny to the oven. And taking it to,a processer is not the way to do it.

Just finished some zebra tenders. And they where great

Never eaten Aoudad, but looks like you have enough seasoning there to cover the taste of duck, so it should be ok.

Lol. All the seasoning is on the top to srart. There's quite a bit but there's also over 10 pounds of meat.
