    Processors???

    I have hunted for years and always processed my own meat. I just cut into roast, bacon wrap the back strap and grind the rest.

    So my son ( Sgt in the Army ) shoots a small doe and wants some summer sausage. I take all 4 quarters to the processor thinking it will make 50-60 lbs. So I tell them half regular and half jalapeños and cheese.

    It makes 72lbs and they made 36 and 36. $295 which was more than I wanted to pay but........

    So I am home loading the logs in the freezer and I have 17 logs each. 2lb logs so that is 34lbs each.

    So am I looking at this wrong?? Should I call them?? Not worth a trip back up there.

    I will continue to process my own meat but I am not set up to do summer sausage.

    They charge you the wet rate. It will not be as much after they have prepared it
    .

        They probably shot for 2 pounds per log, but can't nail it every time. Then they weight the finished batch and give you the total weight.

          I'll net the 72# is before curing/smoking! You got all you were supposed to.

            I can't see the weight dropping in half. Follow up with them. They may have messed up somewhere. Or at least weigh one of the summer sausage sticks. That should tell you something.

                I doubt they weighed each log and made it exactly 2 pounds they probably just weighed the whole box and charged you that weight X the $$$per pound.

                  Something is wrong!! SS is usually made 80-20. 80% deer meat and 20% pork. SS is not charged by a wet weight, only jerky and jerky sticks. Small doe, 2 hinds, 2 fronts will normally bone around 30LBS. Add 6 lbs for the 20% pork and should have 36lbs total. Then you wanted 1/2 and 1/2. Should have gotten around 18 lbs of both. Did you take boned meat? If not, there was a price for de-boning. I would call and ask to explain the price. If you want PM me, I probably know the processor and might be able to help you.

                      68 lbs of summer sausage out of a "small" doe. Sounds about right.

                        Not exact weight on packages, I used to grind 100's of pounds of meat a day would try to hit 2lb mark every time. Got about 10 per every 500 on a good day.

                          Man, I'm spoiled by Stephens Processing here in Abilene. I can get a deer processed into steaks and sausage for about $125. I took my mule deer to a processor in Amarillo yesterday, and when they said it would be $300 I about crapped. I ended up paying them $100 and donating the meat to hunters for the hungry. The old buck was pretty shot up and stunk like heck anyway. I can get 2 or 3 whitetail does processed here for that same money, and it'll taste better. It was too warm to leave him in my truck all the way back to Abilene, and I didn't want to have to quarter him in the Wal-Mart parking lot since I was already back into town. Lesson learned....ask for prices before committing to a new processor.
