I cooked some ground bison last night and made spaghetti sauce. It was delicious. Last night I sprinkled some bison steaks with fiesta steak seasoning and left them in the refrigerator overnight. Cooked to rare/medium rare tonight. Delicious!!!!! Nothing better than eating what you kill and what could be better than free range bison?

Bison--it's what's for dinner!
The steaks I cooked tonight were labeled sirloin. They were plenty tender and had great flavor. Even better than what I remember of the ranch bison I shot years ago. Can't wait to try the ribeyes, tenderloins and backstraps! I would love to stuff a tenderloin with boudan and bacon wrap and grill. That sounds like heaven!!!!!
