Interesting read. Being essentially a "new" hunter, (haven't hunted in 30 years), that is one of my biggest concerns. Living in Texas we don't get very many of the really cold stretches of weather where we could leave a deer out overnight. I've never field dressed an animal either so that is something I am going to have to work on. Maybe start with hogs before moving up to deer?

I just aged my deer in the cooler for a week. But I covered it with bagged ice instead of loose ice. I still kept the cooler at an incline with the drain plug open. I prefer to have cool, dry meat than meat that has been left in a cooler full of wet ice. Nothing is worse than butchering wet, slimy deer.
Anyway, after a week on "dry" bagged ice, butchering was easy. The steaks were super soft and tender when I was cutting them. I usually cook my steaks rare, but I cooked up a few medium and it required no steak knife to cut them.Last edited by Blood Trail; 11-18-2014, 07:27 AM.
