I would d-bone the meat first.

I usually take my deer apart and go ahead and cut up and package the backstraps and loins.
I then will remove all connective tissue and cube the meat and freeze it in large gallon or half gallon ziplocks, until i'm ready to grind it.

I freeze all my deboned deer meat, doves, quail & fish in freezer ziplock bags but fill them with water & get all the air out before going into the deep freeze...no way to get freezer burn & lasts a lot longer.

Simply leave out to thaw when ready.
