I HIGHLY recommend this book for cooking all kinds of Texas game from deer to hogs to turkey to crappie. The turkey pot pie recipe alone is worth it! Go for it!

To fry, cut into very thin strips, and against the grain. That will keep it from being tough. The season, flour, dip into milk/1 beaten egg mixture, then into flour again, and deep fry. You will have to force yourself to stop eating it.

Also, you can take 1 breast, put it in an oven bag, and put Italian dressing, new potatoes, corn on the cob, snap beans, carrots, and whatever vegetables you like in it, and grill for several hours on low. Delicious.

Smoked one on the pit a few years ago just because I heard it would dry out and felt i had something to prove. Inject with butter and a seasoning of your choice. Rub the ranch dressing on the outside, then cut 2 apples and 2 oranges in half and stuff. Then while doing the 8 hour smoke keep a mason jar of water in there(refill at halfway point). Came out perfectly moist family loved it for thanksgiving.
