I didn't watch the video until just now.
I quit watching when he started cutting the front shoulder off with the hide still attached.
That guy is an idiot as far as cleaning an animal.
It's a whole lot easier to take the skin off in one piece rather than multiple pieces.
Yes the hair can be rinsed off, but that's just one more unnecessary step.
The only hair we have to rinse off is usually on the hind quarters, where the cut is first started. Every where else, the skin is inside out, separating the hair from the meat.
