    Wild hog bacon is difficult. It has to be really fat. Most wild ones are too lean for bacon. I have trapped and fed out some that got plenty big enough.

      Yep. If you shoot 'em in the wild, scratch bacon off the list. If you trap one and can finish it off with corn and sweet feed, there's your bacon.

        We only keep backstraps and the rest goes to sausage

          I quarter them up and put them on the smoker. Then finish them til the meat falls off the bone in the oven. Shred into pulled pork and vacuum pack in one pound packages. Takes little freezer space and is quick to prepare.

            Grind all wild hog. Put in batches of 25 lbs. Sprinkle with AC Legg seasonings found on Amazon. Their chorizo is the best I've ever had. Vacuum seal and freeze.

              Best chance for bacon off a feral is to trap a young boar and cut his gonads then feed him up. Bar hogs get big enough to make bacon.

                I cut up the back straps into steaks, the shoulders/trimmings for sausage, bone out the hams to make to pulled pork, and fry the ribs.
