Pico recipe?

I've been making the same chopped and diced Pico for years....... Anyone got a recipe for a food processor Pico? We have a bumper crop of tomatoes and peppers this year

My wife makes what she says is pico in a food processor I call it chunky salsa. We are freezing or tomatoes and peppers in a sealed bag.

Interesting. My wife has been freezing all the cherry tomatoes we grow for stews and slow cooker meals. Freezing Roma's might be an option

My brother in law makes some good stuff. Ill see if he can share the recipe with me.

I made a big old batch for fajitas yesterday.

Tomatoes
Japs
Onion
Cilantro
Lime juice
Minced garlic
Sea Salt
Pepper
Pinch of cumin (sometimes)

Took the leftovers and added a can of black beans and putting over a taco salad for dinner. Throw in some cottage cheese and you have a heck of a chip dip, or a meal in itself.
