ceviche...who makes their own and what do you use?

    shrimp,octopus, red onion, jalapeno, roma tomato, cilantro, juice from enough limes to make a little pool of lime juice at the bottom of the bowl.

    cover and put in the fridge 6-8 hours (we usually make it in the evening for the next day). Try to stir it up every few hours. salt it before serving if you want.

    need to let it sit long enough for the limes to "cook" the raw shrimp and octopus. if you can't get octopus, bay scallops make a good substitute.
