I know we're all hunters here but how many people actually grow their own food or pick wild fruits and vegetables to can? And what is your favorite thing to can?

My wife and I can a lot, pickles, tomato suace, salsa, green beans, wax beans, sauerkraut, and a slew of jellys/ preserves. We enjoy it as it seems like a dying preservation method. Her grandma at 89, has been a wealth of knowledge as shes canned her whole life and being a farm family, it was a necessity.

we can green beans, okra, squash, salsa, pepper sauce, relish, and i just put off my first batch of mustang grape wine. we also put up about 2 bushels of apples every fall and a bunch of peaches every summer but I don't grow those yet. we freeze all the black eyed peas along with a lot of squash and okra for frying. i enjoy it. me and the wife can do it together, and it tastes way better than the store stuff.

I know it's quite a tradition, but canning is going the way of the world (except for pickling), a quick blanch and vacuum seal takes away a lot of the heat, threat for disease, and cost (jars, lids, etc) of canning.
For the price of a pressure canner and the jars and lids, you can buy a vacuum sealer and rolls of bags. Freeze them, write on them, put them in freezer. Many people have a chest freezer but not an additional pantry for jars.
Just my 2 cents.
