I promise Ragin can have you fajita seasoning before Sunday.

There's also scientific evidence that suggests that marinating for more than 20-30 minutes causes more harm than good, just FYI

6 Tomatillos, 2 fresh juiced limes, 3 whole peeled garlic cloves, 1 jalapeno whole, 1 bunch cilantro, 2 tbs salt and 2 tbs blk pepper, 1 cup white wine (pinot grigio or a chardonay).

Put it all in a blender and cover the fajitas with it for at least 4 hours (overnight is great too).

Salt and pepper them again while they're grilling, and you will have some very happy teachers.

          Side note
After you pull the meat out, add another seeded and deveined jalapeno. Dump the marinade into a sauce pan. Cook on med high until the wine is cooked down and you have an excellent salsa verde.

Go to Wal-Mart. Claude's Fajita Marinade is really good! And it comes in gallon size as well.

Just use Italian salad dressing. Nothing else needed.

There's a school of thought that says italian dressing is so acidic that using it as a marinade breaks down the protein bonds towards the surface of the meat and cause the meat to be a touch mushy, especially when meat is left to marinate for more than 15-20 minutes.
