Survey: Javelina taste

I put mine in a crockpot with a bottle of red wine, garlic, onion and black pepper. Cooked it slow and low. We then put it in tortillas like barbacoa. My wife even loved it.

You should quantify your survey, with another question, how many javelina haters eat spam and Vienna sausage.
Myself I will eat javelina as long as it's been properly handled, gonna have to get a whole lot thinner than I am now for the canned stuff.

Few I have tried were immediately skinned and gutted and on ice and were pretty good. But I love me some duck as well so take that with a grain of salt.

I don't even eat ****, much less javelina. Had it one time and that was it for me.

20 years ago, I hunted a ranch about 75 miles from Laredo with a friend. Ranch owner said shoot Javis if we saw them so I killed two and my friend killed two the first Friday evening. When the local ranch worker picked us up and saw them , he asked what we were going to do with them. I said he could have all four if he wanted.

Man his eyes lit up when he finally understood he could have them! He started speaking rapid spanish to another guy and they had them field dress is a few seconds. When we got back to the cabin, he invited me to go with him to Laredo. I asked if he was going to dress the stink pigs first and he said "NO...... I takey to Laredo. Trade for p----. I decided I didn't need to go right then and there. Neither guy made it back in time for the morning hunt and at dawn , we drove out to the stands in my truck.

I guess someone in Laredo really likes them.

Take the entire skin off. The one I think people are referring to is the one on their butt right above the tail.

I just made a bunch of javelina sasuage and took some to work. They all liked it even the girls in the office, and some have even offered to buy some if I can make more.
