    Processing Nilgai recommendations

    Will be going on a hunt here in the next couple of weekends and upon harvest I'd like some feedback as to what yall had the meat processed into(hamburger, steaks, sausage, salami, etc etc) Any do's, dont's, and must would be greatly appreciated. Thanks

    We process them just like deer only on a larger scale. It took a truck to pull him up into an oak tree, then skinned him out and cut him up into steaks, roasts and pieces to grind.

      I do the same as a calf. You can cook the steaks like a ribeye.

        I got steaks roast and ground meat and we ate every piece. They are awesome to hunt and even better to eat. Good luck!

          cut all u can into steaks eheck even the ground meat is awesome. good eating right there and dang good fun hunting them

            We've killed 21 this year and I've processed three of those myself. The others were guests who sent them to a processor. As was stated above, process them just like you would beef. Unbelievable table fare. Here are some pics from last week. My son took a group down and killed 5 in one weekend. Needless to say they were tired suckers after skinning and quartering all of them. Here is part of the over two hundred pounds of hamburger meat. I added 10% bacon ends and pieces to it.

                Here is a sample of the boneless steaks. I wrapped these in bacon and pre seasoned them with Uncle Chris. Got about thirty pounds of these from ONE cow!

                    Here are the Tbones, bone in rib eyes, and I guess what you'd call bone in sirloins? These were done after I froze the entire backbone with backstrap and tenderloin attached and then used a meat saw to cut them. Over forty pounds of these from one cow!

                      Shoot a medium sized one like you would when picking out a calf to eat. That way steaks will be good and tender.
