hunt with 2 dogs?

This. If you are talking about retrievers the dog should be trained not to go until given the command to do so. Most will use the dogs name as the command. This way you can hunt with 2 retrievers and just alternate them.

If you plan on doing any hunt tests the dog will have to learn this anyway

You better make sure they are both well trained or be prepared for lots of yelling and torn apart birds.
