We processed ourselves, and it was quite a project :-( but worth it!

I had a 750 lb. bison cow processed about 4 years ago for $250. I'm sure it's probably higher now. Straight steak cuts and ground, no sausage or anything.

I'm thinking it would cost me about a dozen blades on my Havalon knife, a large amount of freezer paper, vacuum bags and some electricity for the grinder.

That and time....but it would be worth it. Get a couple of friends involved and pay them in meat and beer. Sounds like a good weekend in the making.
