Pheasant and dumplings!!!!

Myself and some buddies did a released bird pheasant hunt in early February. Have been craving chicken and dumplings. Decided to use some pheasant and do things the wild game way. Should be done in 10 min. The broth is delicious. Can't wait to get my eat on!

I grew up in Amarillo and went to tacos a class of 96. I love my hill country exotics, ducks and dove. But I miss the pheasant the most.

God they are delicious and fun to hunt!

Taster bowl. Yes, it's fantastic! I grew up in San Antonio and really miss the hill country and coast. I get down that way as often as I can. I do love the panhandle. Great people and I have an incredible practice. Lots of hunting around if you look for it and you can be in the mountains in just a few hours.

I promise it turned out great. I used a recipe from pioneer woman. That lady has made me look like a hero in the kitchen many times. Y'all send me a pm when you are in Amarillo. I'm up for a beer or you can come look at mounts and I'll make you a cocktail or 2. As long as I am not on a hunt or working then the invite is open.

Never seen wine with a bowl of dumplings! Way to go!! Pheasant is delicious. If ducks and geese tasted like pheasants or quail we would fight over em at the end of a hunt!

Didn't know what to pair with the meal but I figured white bird and white wine. I guess tea or beer would go. I love the ditch chicken. We always called them Chinese chickens!
