One of my hunting buddies has been raving about the place he gets his processing done, for the past couple of years. So, this last season I decided to give it a try. I live in Sabinal and I usually take my meat over to Uvalde Meat Market that really does a terrific job. We're friends with the owners and have never had anything but great results. But, just for fun, I took a couple of deer over to Klein's Smokehouse in Boerne - about 1.5 hours away. After a 3 hour drive (there and home) to drop it off, I was starting to regret the decision; but they had so many different options that I've never had before, I figured I'd wait to pass judgement until I got it back. Well, about 2 weeks ago I went and picked it up. Total processing time - about 3 weeks.
The meat I got back is, hand-down, the BEST deer I've ever had. I waited to post anything until I had a chance to try everything I had made. There wasn't a single item that isn't the BEST I've ever had. I figured I would pass along the recommendation to those who are within reach of Boerne. I will not hesitate to bring them most of my meat from now on - it's worth it.
Price- It was no more expensive than taking it to Uvalde Meat Market; and, based on some threads I've seen on here, it's a lot cheaper than a lot of folks seem to be paying.
Packaging - The packaging was 1st rate! Heavy duty vacuum seal bags that look like they came out of a grocery store, with detailed labeling. Definitely the most professional packaging I've ever seen.
I have NO doubt that the meat I received was the meat I dropped off. There was ALL sorts of tags and labels in with the meat that were obviously used to keep track of the meat as it was divided and processed into the different items.
I'll put a link below to their website so you can look at their selection of ways you can have your meat done; but here's a list of what I had done with 136# of meat to sample their selection:
Bratwurst Sausage links
Italian Sausage links
Light smoked ring sausage with Jalapenos & cheese
Light smoked ring sausage regular (for the kids)
Chopped steak, bacon wrapped
Chopped Steak with Jalapenos & cheese, bacon wrapped
Backstrap, bacon wrapped
Smoked and peppered backstrap
Jerky strips
It came back in 4 big boxes of natural GOODNESS! I gave the items I've never had before a thumbs up just because they were so unique, to me, and so incredible. There wasn't anything I had done that I thought I could improve on or that I had done better ANYWHERE else.
Anyway, I hope this helps some of you folks who have been struggling with processors. THIS ONE ROCKS!

P.S. They also (now) own Hudson's in Austin. I had some meat done up there years ago and wasn't pleased but these are different owners. Some of my meat (chopped steak) went to Austin because the recipe came from Hudson's. The operation sends specialty items to the facility where the process/recipe originated so that they maintain the continuity of that specialty. They have their own trucks and there's no charge for this. Despite my bad experience in the past with Hudson's, the chopped steak I got back is one of my favorite items! If you haven't been there in a long time, give it another try - these folks really have it together and the menu is the same at both locations. So, really, I'm recommending both Klein's Smokehaus AND Hudson's, since they're the same operation now.
