Men in my church, Alsbury Baptist in Burleson, cooked wild game as part of our Super Bowl watching festivities. I prepared bacon wrapped goose smoked with apple wood. Soooo good. Marinated overnight first in an apple cider concoction. Did I say it was sooo good? I had a few pieces left over for dinner.

my granny would stuff whole picked snow geese with sausage and sauerkraut and smoke them.
