That is not tequila, good sir. That is mezcal.
Mezcal is any spirit distilled from agave.
Tequila is a spirit distilled specifically from the Blue Weber Agave plant.
Therefore, all tequila is mezcal, but not all mezcal is tequila.
Mezcal's are typically distilled only once, and tend to have a flavor that is earthy and smoky, sort of like a good Islay single malt scotch like Aphroaic.
Plata, or silver tequila is my favorite for shots. It is bottled immediately after distillation and has a lot of that black pepper and agave taste to it.
Reposado, or "rested" tequilas are my preference for margaritas due to their mellowed character they get from the tannins of the barrels they spend ~3 months in.
Anejo, or aged tequilas are as complex as a good scotch and ideal for sipping. I collect "extra anejo" tequilas, and they're a true treat for a special occasion.
Sorry for the rant, I tend to get verbose when my favorite spirit is mentioned!
