    Deer Jerky

    Just bought the Pro Series 10 tray digital dehydration from Cabelas today. Have some questions. What is the best jerky seasoning? What is the best way to prepare jerky? Last, the directions from the dehydrator says to get the meat to 160f for food safety purposes, and then start dehydration process. Do you cut the pieces from the roast and cook until it reaches 160, or do you just put the meat in the dehydrator? It also says to use a cure. Any suggestions for the cure? Thanks

    get a Hi Mountain kit. they sell sampler kits with like 5 different flavors

    i marinate overnight in Claudes fajitas seasoning, sprinkle on the seasoning and cure, and dry for 5ish hours

      So you put on te dehydrator for 5ish hours. Do you put the meat raw in the dehydrator or put in oven for a little to raise internal temps to 160 for food safety and then put in dehydrator?

          Yup put the raw marinated and seasoned meat on the trays and turn it on.

              I like Eye of round roast if making beef... The butcher will slice it for free.

              Hi mountain cure, follow the directions as far as ratio of cure and seasoning.

              I prefer to use the smoker with pecan wood for 1-2 hours, then finish on the dehydrator. I do not like liquid smoke.

              You can experiment with roosterchester sauce, teriaki or what ever flavor you like.

                I made deer jerky for the first time a few weeks ago. It was best cut very thin, less than 1/4". We tried the Hunters Blend, Pepperoni, Sweet and Sour and Jalapeno flavors from High Mountain. Everyone loved the jalapeno. It was flavorful but not too hot. The hunters blend came in second and has the taste of typical jerky. All flavors came with cure. I cooked in the oven at 200 for 1.5 hours. Worked great, very tender. Good luck. I plan to do this every year.

                    also, you can use thicker pieces by just beating them with a steak hammer until you get thickness you want.
