What causes this?

What causes honey to do this? I have it stored on one of my pantry shelves and I have had some do it and some not.

Both of the above. Just heat it (slightly, like, under warm water) and it'll flow like.......honey.

The more glucose in the honey, the sooner your honey will crystallize.
What happens: There is water in all honey . The water binds to the sugars. But water can separate from glucose. When glucose loses water it becomes a crystal.

Put it in your dishwasher the next time you run it. The hot water will get it to flow again.

I've heard that Honey is the only food that will never spoil of go bad. Tastes pretty good too. Light heat to it and you should be good to go.

Cold temps. It goes to sugar. Just heat it up and it will go back to normal honey.
