Your favorite way to cook speckled trout?

    Here ya go, This is for about a pound of fillets,

    Mix 1/4 teaspoon salt and 1/2 teaspoon (Each) onion powder, garlic powder, red pepper, black pepper, white pepper,dried thyme. Coat fillets with a little melted butter or evoo, and sprinkle seasoning heavily on both sides. Get yor skillet HOT on the coals for about 5 minutes, add a little evoo and cook 3-4 minutes on each side. This works good with catfish or tilapia too, but its best with specs. I serve it with saffron rice with a little cilantro, and lots of cold beer. The store bought stuff is good, but I like this mix a lot better.

      I like this recipe for light fish such as trout, sole, or talipia. It works well as a summer dish.

      Make some pineapple or mango salsa with fresh pineapple/mango, purple onion, a jalapeno, cilantro, lime juice, and a bit of salt. Taste it - if you want to tame some of the heat, add a bit of suger. Season filets with lemon pepper, Old Bay Seasoning, and a bit of salt and pan saute in a 50/50 mix of olive oil and butter (1 tsp or so of each per filet) until golden. Place a filet on a plate and spoon a bit of the salsa on top. I usually serve it with seasoned fresh green beans cooked in foil packets and a Mahatma Saffron Yellow Rice with 1/4 cup of chopped cilanto stirred in 5 minutes or so before serving.

        Oh yeah, I left out the mango salsa, and I do the same rice and salsa as Dave. Its awesome.
