    Processing question

    Kind of a strange question, but I need opinions. I know of a family who is struggling financially that I feel I am being impressed upon to help.

    I have decided that I am going to give them a hog if I can trap or kill one, but I'm not sure in what form? I talked to my wife and she thought that I should just gut it and take it to them. I've thought on it and that seems like I'm having all the fun and no work which doesn't feel right, so I am going to process it. I have a grinder and have started doing my own processing so it won't cost anything and I get practice out of it. If someone were to be giving you meat, how would you want it processed if you were trying to stretch it as long as you can? When I was single, ground meat was king of all dishes. What says y'all?

    I would do lots of ground and then cut some chops and a few roasts out of the hams. All great meat that is easy to cook and very healthy for them. Good for you for helping them out.

      If i was in that position i dont think it would matter... Free meat is free meat. I say process it however you feel like amd what works for you. They'll appreciate it.

          That's a very noble thing to do. We've done stuff like that before. They should be glad with whatever you do. Another thought is to go over to the recipe forum and find one of Mesquite Country's sausage recipes and make up some pan sausage. A grinder and the ingredients are all you need, and like you said, it's good practice for later.

              You can do anything with ground meat. Personally, I would quarter it and clean it really good.

                  invite them over to help. They bring the beer and seasonings. It is hard for me to eat sausage someone else made. I know what can be put in the grinder. Had too many bad sausages. I trim the heck out of my meat. Get the glands, silver skin and slimy bloody stuff out. Thats for the dogs, not the sausage. To me deer sausage is just as good as back strap. It about quality not quanity.
