Could be some funky scar tissue. Doesn't seem to be hindering his health just by looking at the photo. I have seen picture of deer with big knots on their noses and when you take the hide off it was antler from another buck he had been fighting. Only one way to find out about the meat...take a closer look under that nice coat!
