If you watch a deer react...they always drop the front first. I'm sure it has happened...but I have yet to see a deer lung forward or jump up on the shot. I have also never seen a deer drop their front shoulders with their head up in time to duck the string. If their head is down they are already half coiled to drop.
So if I have any question at all...I will wait until they are calm and pick their heads naturally before I shoot. So far - I have yet to have one duck the string with their head up. This is obviously not a rule it just seems to work for me.
