    Processing Axis

    I'm curious as to how you guys get an axis doe processed. Ive heard do as much as you can in steaks, and then grind the rest, but this is all new territory to me. I plan on getting a WT doe or two made into sausage this year, so I will venture to say I wont do sausage out of the axis. Any suggestions?

    Make it into steaks/ cutlets. You won't be disappointed.

        You heard right. Steaks are the way to go with as much as you can. Delicious!

          What kind of steaks would these turn out like??? The only finished products Ive gotten were cutlets for chicken frying, dry and smoke sausage, and hamburger.

            I did both my axis in mostly steaks- Backstrap cut size of snuff cans- not tendorized and rest chicken fried.

            rest had grind into burger - figure I would taste it better that way than sausage since had plenty of deer.
