    jerkey question

Anyone ever try that marinated fajita meat that you buy at Mexican meat markets for jerky ? I am thinking it would make some good jerky, maybe buy it plain and marinate it yourself, I am out of venison and have a hankering for some more jerky.

Following this concept...seems very reasonable to try it

Only if the meat is lean

I've thought about it. The meat at the local-ish mexican store is really thin sliced and lean. But I aint making jerky out of the marinated meat they sell. That stuff is off the chain for fajitas.

I haven't and are you talking about fajita skirt meat? I will do a roast and have the deli slice it according to how I want it. That is pretty good stuff and I can buy it (on sale) much cheaper than giving a processor my deer meat and then paying a premium price for the jerky plus the loss of my deer meat. I much prefer my deer meat for other things other than jerky unless I am doing it myself and even still I prefer beef for my jerky.

havent done the fajita meat, but our local one sells marinated jerky meat. I add my "secret marinade" and it tastes great.

Try some of Blakes' Ragin Blaze jerky seasoning

I think it will work just fine.I would flatten it out with a mallet to about a 1/8" thick.

It will work fine, that's how I buy my meat for jerky but without marinade. Just make sure it's lean.

Oh man, I stopped by a Mexican meat market in Wichita Falls, they had some meat that was perfect for jerky, pretty sure they make their own jerky with it, it is about 4 to 6 inches wide, 12 to 14 inches long and about 1/4 inch thick, most was very lean but did have a couple pieces that had thin layer of fat, it is in the dehydrator now, I hope it turns out half as good as it looks. I bought the unseasoned meat, it was 4.59 a pound.

Which market you go to, Roger? I might want to make a batch to take to the lease. I know it won't last long but what the heck.

The one off of Old Jacksboro Hwy I think, it is where all the car lots are , down from Baron Brothers. I bet the marinated fajita meat would work just fine. You been seeing any big bucks ? We filled some feeders yesterday morning, seen a few pretty nice ones.
