    Prepped a pork butt to smoke

    I've never smoked one but it's been on the list for a while. I rubbed it down with a thin layer of honey and put some garlic and onion powder, fresh pepper, Tony's and a dash of paprika on. Hopefully it will turn out good tomorrow. Gonna fire up the Bradley in the morning.

        Cook it until the internal temp is 200 then wrap it upbin goil then a towel and let it set for a hour

              This is the butt waiting on the smoker to warm up. The rub is pretty good to me Andy. I use it on just about everything. I haven't ever used honey to help it stick though. Click image for larger version

                  I'd read to use something like that or vegetable oil. Figured there was an outside chance the honey would improve the flavor.

                    Bark is awesome. I didn't leave it in as long as I should have for pulled pork. I got busy and had to stop it at 180. Wrapped it up and let it rest. Went ahead and sliced it up. Saved the bone for the next batch of beans.
