    Marinate in Italian dressing, put on foil on grill, layer with onions dabbed with olive oil.
    Don't overcook.

          If you have the skin on them, do them half shell style, no flipping. Simply coat the top filet side with butter, seasonings (what ever floats your boat) and place the skin side down on the grill till it flakes.

          If you have filets, a simple foil boat with olive oil and butter on the bottom. Rub the filets with butter and season and place those on the foil boat and cook just to the offside of the fire with the lid closed for a bit of smoke. No more than 3-5 minutes..till they flake and pull them.

          I've also soaked them in Viva Italian dressing and placed that down into a foil boat that has a bit of Italian dressing coating the bottom....grilled till they flake and off (minutes only).

          Do not overcook them....better to pull them right before they are done. They will continue to cook a minute of so after getting pulled off the fire.

          Olive oil and butter with a bit of lemon....don't need much for seasoning, they eat light and GOOD!
