    Traveling with a brisket question

We are going to Dallas this weekend to visit some friends and I had thought about cooking a brisket here (Houston) on Thursday afternoon/night and then taking it with us to eat Friday night for dinner.

My thoughts were to let it rest once it comes off the smoker and then once it cools off refrigerate it overnight and haul it up there in an ice chest and re-heat it in an oven before we sliced it and ate it Friday night. Would that be the best way to keep it overnight and re-heat it or would there be a better way to do it?

Depends what time your leaving its only about 6 hours to Dallas if you drive slow. Pull it off just before you leave foil it wrap in towel and put in cooler and it should be fine till about 4-6 that night plus less reheating time if you need it.

That's fine. Just reheat it slowly. If you do ot to fast it will dry out.

That will work fine...reheat it just like you cooked it...low and slow!

I smoke a brisket every year for a family vacation and then take it down to Wimberley. I smoke mine and put it in an ice chest. I haul it down there and it is still warm the following evening to eat.

Slowly like 250 degrees in the oven? How long should it take to re-heat it?

Is keeping it whole until its ready to eat best or should I slice it before I transport it?

              Thanks for the help.

If you're keeping it overnight or longer, wrap it in saran wrap and refrigerate it once it's cooled. To reheat it, put it in a 200 degree oven in the plastic wrap for 2 hours. Plastic wrap is good to 250 or so. This way, it won't get dried out.

The only way to do this is to go buy a new high end cooler !!!!!! Yeti or Brute should re heat just fine-

See my posts in this thread. http://discussions.texasbowhunter.co...d.php?t=380729

Short answer....vacuum seal then reheat in pot of boiling water. Other tbh's that I have told this too and have tried it agree they will never reheat in oven again.
