My last ram from diamond c wait is a mouflon a ram or sheep. Oh well I leave all my meat in a ice chest for about a week with the drain open. Just keep it iced. Then do what you want with it. If you like wild game it will be fine. I made hamburger out of my mouflon.

You can cook a ram like any goat. Barbacoa or tamales. I suggest befriending someone from south of the border to give the meat to and have them cook it. I ate the heck out of the Corsicans and Mouflons i've taken. We usually cook our in an underground pit for around ten hours.

There was I guy at Thompsons a couple weeks ago the made ram meat into a sloppy joe style sandwich and it was delicous! I've tried it several other ways and always turned out to be a failure. Try it that way, I bet you'll enjoy it.
Disclaimer: ( my senses were possibly a slight bit impaired by the amount of alcohol I consumed lol)

I have never cooked a Rambo, but I am a fan of ram meat, Aoudad being my favorite.
Use it just like I would a deer, makes a great sausage. On the smoker and in the pressure cooker work well too!

If I ever kill one, I will definitely try it. I'd treat it like a larger hog, on ice with some lemon juice and vinegar for 2-3 days, draining water and adding ice daily. I have had great success like that. I'd at least give it a shot.

It turned out to be quite good. I guess it all comes down to preparation. JJ told me he seasons the meat and then boils it in red wine for about an hour. Then into a skillet where he browns it, then serve over a bed of rice. He added just a touch too much curry for my taste but I was very surprised at the quality of the meal.
I will hunt at Diamond C again and JJ won't be getting all of the ram meat.
I am pretty sure that is the secret. Put enough CURRY on something and the it takes over anything. Even the way you smell the next day. You will smell like a middle eastern convenience store.

Good luck to yall this weekend JD, yall forgot to pick up my gopro though haha. Ram meat is pretty good, just make sure you put it on ice ASAP. usually helps if you give it a good scrubbing in salt water before you prepare it, however you wanna cook it. Keep me updated on how yall do!

i shot one a few years ago. i gave it to a hispanic lady here at work, and she said it would be prepared good enough for us gringos to eat. it was very finely shredded and sauteed in whatever concontion she had cooked up. after being soaked, shredded, and cooked, the STINK was still on the meat. i had to put it in a tortilla, cover it in salsa,( it was still very dry ) and basically hold my nose as i ate it. the smell still permeated through my taste buds.....i can't say never again, but.....i'll have to be $%#@ hungry !

If you put some ponchartrain sauce on it, it may be edible. I haven't had any I liked. I hunted a lease in Uvalde that had goats on it, the meat smell's just like those nasty thing's! I tried cabrito and didn't care for it either.

You might be better off just throwing it IN Lake Pontchartrain.....
