    OT- canning hot sauce

    I love to make homemade sauce. I was thinking about making a lot of it and selling some at first monday in canton next month. Hows the best way to do it? Have to put anything in it to preserve it?

    Also, anything i would need to do to sell it? Paperwork?

    And what about selling food( bbq samiches, sausage on a stick, etc)

          I believe u might need a food handlers permit if you are going to set up a booth type deal... I am not really positive though, sorry I can't be of any assistance...

                My wife has been at canton for four years. selling a dry food mix. if you want to sample or serve food you have to have city health code license/approval. they will fine you they like that. more fresh/homemade items sell vs professional manufactured.

                Good luck. My wife bailed yesterday due to falling sales over the past two years.

                  Call Canton city hall or Van Zandt county clerk. They can tell you what permits you will need.

                              You just want to make sure you add enough acid (lemon juice, lime juice or vinegar or any combination of them) so that it drops the pH to a safe level that way after you water boil can the salsa, the added acid will continue to effectively kill all the bacteria, especially botulinum. The acid will be your preservative.
